Grilled Vegetable Hummus Wrap

Summer has almost arrived and I am trying to whip myself back into shape. This meal really helped me to feel like I was getting the nutrition back into my body that I needed. The world knows the importance of eating vegetables to maintain good health. I for one am lucky because I love just about every vegetable out there. Unfortunately, not everyone looks at vegetables the same way I do. This is probably one of my favorite easy recipe’s because of the small amount of time it takes to prep and cook AND the vegetables can easily be swapped out based on your preference.

I couldn’t believe how filling this wrap was when I ate it. I put some of my favorite vegetables in this but it is easy to add or remove them based on what you like. Just don’t put too many in there or else the wrap won’t close. This is such an easy and quick meal to make. It is perfect for the easy, weekly meal preps.

Ingredients

  • 4 Whole wheat tortilla shells
  • 1/3 cup roasted red pepper hummus
  • 1 cup kale
  • 1 cup spinach
  • 1 cup sauted mushrooms
  • 1 tbsp olive oil
  • 1.5 cups grape tomatoes sliced in half.
  • 1/2 red onion
  • Optional: Sriracha (for a little more heat)

Instructions

  • Lie out tortilla shells and spread hummus evenly using a butter knife.
  • Measure and chop all ingredients.
  • Once all of the vegetables are prepared, spread them onto each tortilla shell evenly
  • Add the optional Sriracha on top of ingredients at this point.
  • Roll up the tortilla and place on a grill (I used a George Foreman Grill) on medium heat for 2 minutes (give or take depending on how crispy you prefer your wrap).
  • And just like that…..you have a healthy, colorful, and filling lunch within minutes!
