After being diagnosed with prediabetes at 12 years old and successfully reversing it one year later, Penny’s academic and professional journey from very early focused in her pursuit to become a Registered Dietitian and an aspiring researcher and scientist.
In the final two years of high school Penny was dually enrolled in School for Advanced Studies’ merit-based high school collegiate scholarship program where upon completion of high school she graduated with her Associate in Arts degree in Dietetics and Nutrition from Miami Dade College and her high school diploma at the same time.
Afterwards, Penny furthered her education at Florida International University (FIU) where she holds a Bachelor of Science degree in Dietetics and Nutrition,and shortly after, competed and was awarded admission in the top of her class for the Registered Dietitian (RD) Internship. During the RD Internship she completed clinical and community rotations while at Jackson North Medical Center, Villa Maria Nursing Center and St. Catherine’s Rehabilitation Hospital, DaVita, as well as to the Aramark company at FIU where she served as a consultant to assist The Fresh Food Company in reaching 100% compliance for Partnership for A Healthier America.
Penny is a licensed and Registered Dietitian and Master of Science (MS) Candidate in Dietetics and Nutrition with a specialization in nutrition biochemistry. During her MS degree Penny continued to gain acute-care hospital experience in a variety of chronic and acute conditions where she was able to integrate current curriculum and research into treatment of her patients.In the MS degree, Penny also has pioneered research in dietary components, especially nutraceuticals or functional foods, that can prevent, treat, or promote diabetes.
Being that diabetes, cardiovascular disease, and obesity are a triad of interconnected conditions, Penny decided to expand her research to evaluate evidenced-based and culturally tailored dietary components that can be used to prevent and treat these conditions synergistically. As a personal, professional, and academic mission, Penny is passionate and dedicated to finding answers for the diabetes community through her research and its application.
Being invited to speak from hospital and community sectors, Penny enjoys giving back to the diabetes community through philanthropic speaking engagements and as an independent expert contributing writer.
